Safely Cooking With Nitrogen
There has been a lot of Jibba Jabba going around about food prepared with liquid nitrogen being unsafe. WHEN DONE RIGHT nothing can be further from the truth. The FDA recommends you avoid eating foods where liquid nitrogen is added RIGHT BEFORE YOU EAT IT. This is because for liquid nitrogen to be a liquid it has to be -321 degrees. Eating something that is -321 degrees can easily burn your mouth, throat and lungs. With that being said, the FDA also states that food PROPERLY PREPARED with liquid nitrogen is perfectly safe to eat.
Chef Chuck James has been working in the culinary industry for decades and has been preparing food with liquid nitrogen for the better part of 10 years. When the liquid nitrogen is added to the ice cream ingredients, it steams. As the Ice Cream slowly churns, the liquid nitrogen comes to temperature. Once the ice cream stops steaming, it has come to the proper temperature and is safe to enjoy.
